Strawberry Basil Quinoa Salad

Serves: 3
Ingredients:
- 1½ cups (355 g) fresh strawberries, sliced or chopped
- 1 cup (250ml) dried quinoa, cooked (makes about 3 cups)
- ¼ cup (375ml) shelled pistachios, chopped
- ¼ cup (60 ml) olive oil
- ¼ cup (60 ml) fresh basil
- Salt and pepper to taste (optional)
- Crumbled feta cheese (optional)
Directions:
- Prepare quinoa according to package directions; set aside.
- Heat olive oil in a small pan and then sauté basil until crispy, about four minutes. This will flavour the olive oil with basil.
- Remove basil and let drain on paper towel.
- In a mixing bowl, add the strawberries, cooked quinoa, pistachios, basil-flavoured olive oil and gently stir.
- Garnish with crumbled fried basil leaves and feta cheese (optional).
