Next, in a medium bowl, beat 8 ounces of mascarpone cheese with 2-3 tablespoons of honey (or maple syrup) and a few drops of vanilla (or almond) extract until light and fluffy. In a separate bowl, combine 1 1/2 cups of grain-free granola (or oat-based granola), 1/4 cup of almond flour, 2 tablespoons of unsalted butter (melted), and a pinch of cinnamon. Sprinkle the granola mixture over the berries. Bake at 375°F for 25-30 minutes, until the topping is golden brown and the berries are bubbly. Serve warm with a scoop of your favourite frozen yogurt or ice cream.

This no-bake dessert is the perfect make-ahead treat for warm-weather entertaining. In a food processor, blend 8 ounces of cream cheese, 1/2 cup of powdered sugar, and 1 teaspoon of vanilla extract until smooth. Whip 1 cup of heavy cream in a separate bowl until stiff peaks form. Fold the whipped cream into the cream cheese mixture. In a 9x13-inch baking dish, layer graham crackers, the cheesecake mixture, and 2 cups of fresh blueberries repeating the layers until all the ingredients are used up. Cover and refrigerate for at least 6 hours or up to 24 hours. Serve chilled.
