Marry Me Poutine Recipe

Ingredients

  • 4 large potatoes, cut into fries

  • 1 cup cheese curds

  • 2 tablespoons olive oil

  • Salt to taste

For the sauce

  • 1 tablespoon butter

  • 1 clove garlic, minced

  • ⅓ teaspoon thyme

  • ¼ teaspoon red pepper flakes

  • 1 cup heavy cream 

  • ¼ cup grated Parmesan cheese

  • ¼ cup tomato paste

  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 425°F (220°C). Toss the potato fries with olive oil and salt, then spread them on a baking sheet. Bake for 30-35 minutes, flipping halfway through, until golden and crispy.

  2. While the fries are baking, prepare the sauce. In a medium saucepan, melt the butter over medium heat. Add the minced garlic, thyme, and red pepper flakes, and sauté for about 1 minute until fragrant.

  3. Stir in the tomato paste, then gradually add the heavy cream while whisking. Bring the mixture to a simmer and cook for about 5 minutes, stirring frequently, until slightly thickened.

  4. Add the grated Parmesan cheese, and stir until melted and smooth. Season the sauce with salt and pepper to taste.
